Ashkenazi Jewish tradition
Latkes
Crisp-edged potato pancakes that are especially associated with Hanukkah. Recipes differ by family; this is a simple, savoury starting point.
Ingredients
- 900 g floury potatoes, peeled
- 1 small onion, grated
- 1 egg
- 2 tbsp matzo meal or plain flour
- Salt and neutral frying oil
Method
- Coarsely grate the potato and onion, then squeeze very dry in a clean cloth.
- Mix with egg, matzo meal or flour, and salt just before frying.
- Fry spoonfuls in a shallow layer of hot oil until deeply crisp on both sides. Drain briefly and serve hot.
Alsace
Grumbeerekiechle
Alsatian potato fritters made from grated potato. Seasoning and texture vary locally; herbs such as parsley, chives, or lovage are common additions.
Ingredients
- 900 g floury potatoes, peeled
- 1 small onion, finely grated
- 1 egg
- 2 tbsp plain flour
- Salt, pepper, herbs, and frying oil
Method
- Grate the potatoes, season, and squeeze away excess liquid so the fritters stay crisp.
- Fold through onion, egg, flour, pepper, and any chosen fresh herbs.
- Shape into small fritters and fry in hot oil until browned and crisp, turning once.
